Tea is a winner at the Chifley Wollongong

This month, Chifley Wollongong celebrates the opening of the first ‘Chifley T Bar’, a traditional high tea concept with a modern Australian twist.

As the name suggests the  ‘T Bar’ serves a wide variety of Dilmah’s Exceptional range of fresh loose leaf teas and herbal fruit infusions, accompanied by Chef’s selection of seasonal fancies including finger sandwiches, hot canapes and assorted sweets.

Created by Executive Chef, Peter Washbourne, the concept was developed after he won the Dilmah Professional High Tea Challenge earlier this year. The acclaimed chef combines both classic and local flavours to create a unique culinary experience reflecting the Chifley’s 4.5 star quality.

The Dilmah Professional High Tea Challenge hosted by Dilmah Tea, held competitions nationwide to challenge chefs and food industry professionals to use their culinary creativity to craft an authentic high tea.

The winners won a sponsored trip to Sri Lanka to visit the majestic Dilmah Tea Gardens for six days. Adrian Teh accompanied his Chef, Peter Washbourne during the visit.
